Dressing

1/four cup uncooked cashews

1/four cup extra-virgin olive oil

1/four cup water

1 Tbsp dietary yeast

1 Tbsp lemon juice

1 giant garlic clove, smashed and minced

1/2 tsp scorching curry powder

1/four tsp sea salt

1/four tsp freshly floor black pepper

Salad

6 cups child spinach leaves, washed and spun dry

three cups bite-sized broccoli florets, blanched however crisp

1 1/2 cups blueberries, recent or thawed from frozen

1 avocado, peeled, pitted and sliced

1/three cup dried cranberries

1/three cup sliced pure almonds, toasted

1/four cup crumbled vegan blue cheese (non-obligatory)
